
Several weeks ago my daughter, Red, asked me why I never make cupcakes, and I couldn't think of a good answer. Is it the messy muffin tins I don't like to wash by hand? The burden of having to decorate a bunch of little things instead of one big thing? Is it because I need a cupcake carrier? A cupcake stand? Who knows (a purely rhetorical question)? I sure don't. But knowing my girl will appreciate the cupcakes makes me want to bake them. Thus begins my journey of cupcakes, the first stop being a decadent chocolate cake filled with salted caramel, fleur de sel salted caramel.
Fleur de sel can be difficult to locate, at least in my neck of the woods, but I am fortunate to have a neighbor who recently traveled to Paris and brought me back the most darling tin of fleur de sel. The recipe calls for over 2 tsp of the salt, which seems like a lot, but it MADE the caramel. My eyes actually rolled back in my head the first time I tasted the salted caramel; I didn't expect the caramel to be THAT good!
To share a few thoughts about construction, the cake, the frosting, and the caramel can all be made ahead of time and stored in the fridge. I filled and frosted half of the cupcakes and saved the other half, unadorned, in the freezer. The recipe directs the cupcakes to be eaten the day they are made, but my family didn't mind ONE SINGLE BIT to nibble on the cupcakes a day later. They were delicious chilled and at room temperature.

I think I don't make cupcakes for the very reasons that you mentioned LOL. I just can't seem to bring myself to try salted caramel. I hear so many raves about it, and certainly your description makes me want to get over myself but there is still a ridiculous hesitancy on my part to forge ahead. Some day, I will!

Pishaw........ I filled mine 2 days after baking (kept in airtight container), and they were perfect! Recipes make you think you have to prepare and serve that day only (at least some do). I love prepping days before, it makes things so much easier. These look FANTASTIC! I'm glad my dad had some Fleur - I love it - and it MADE the cupcakes and caramel (which I love to make now). VERY nicely done this week!
I shy away from cupcakes sometimes too and I'm not quite sure why either. I do hate having to wash the cupcake tin so maybe that's it? Oh well, I'm glad this group is going to force me to bake cupcakes at least once a month because they really are delicious little treats. Your cupcakes are gorgeous this week! I enjoyed them, even if they were quite rich.

These cupcakes were decadent. Chocolate-wise, it was rich and I can appreciate that! Love the salty touch, too!

I don't like the effort of cleaning muffin pans or frosting them individually. I might try this as a sheet cake but cupcakes are too fussy for me. Not sure what you have around you but if you have a store like Marshalls/TJMaxx/Ross/Home Goods/Tuesday Morning or something like that they have a small food section where I have found fleur de sel.

I am in love with fleur de sel!! My husband freaked out when he found out I paid $15 for salt LOL Totally worth it though.
I've used it in the NY Times choco chip cookie (which is now my favorite ccc), salted fudge brownies, salted caramel brownies, salted caramel frosting.... I keep looking for more recipes to use it in and this recipe is currently on my "to make" list :D
