Caramel Crunch Bars

I love it when food surprises me, when I expect one thing and experience something completely different. These Caramel Crunch Bars did just that. In photographs they looked almost wimpy, perhaps even pedestrian, so much so that I considered overlooking this TWD assignment. Skipping these cookies would have been certain tragedy, for they are unexpectedly delicious and filled with a wide range of flavorful textures. I would be amiss not to mention the flexibility this recipe offers with the potential for ice cream sandwiches, but I found the greatest pleasure in enjoying this little cookie in its simplest form, a bar.

The recipe was chosen by Whitney of What's Left on the Table. You can find the recipe here. You can also see numerous other interpretations and presentations of the recipe on Tuesday with Dorie's blog.
